Mumbai goes Molecular in its Mixes
A fad it maybe, but molecular gastronomy has taken the world by storm. And despite various inhibitions alongside gastronomy grew molecular mixology/cocktails. Altering chemical and physical properties of ingredients to create something completely different has its own allure, but a skill extremely difficult to master. That is one of the reasons why so many Indian restaurants are wary of going the full mile with molecular gastronomy as well as cocktails. Spheres, gels, smokes and foams are all that you will see behind the bars in India.
We searched the city high and low to find places where you can try out cocktails with a twist of science. We can’t guarantee whether they are authentic or not, but they do possess a novelty factor which is worth indulging.
Auriga, Lower Parel
Hazelnut Scotch: Scotch, Hazelnut smoked with Cinnamon, Applewood and Cloves.
Orange & Passionfruit: Vodka, Passionfruit and Orange dry smoked with Kaffir Lime and Basil.
Vodka Green Tea: Vodka mixed with Green Tea and dry smoked with Lemongrass and Basil.
Vodka Cranberry: Vodka, Cranberry and Star Anise finished with Basil and Salt foam.
Twisted Espresso Martini: Twisted Espresso martini layered with a froth of tiramisu.
The restaurant recommends the Vodka Green Tea. Drinks are priced at Rs. 550.
Masala Library by Jiggs Kalra, Bandra – Kurla Complex
Star Anise Martini: Gin muddled with Star Anise, layered with Anise airé; garnished with the whole Star Anise.
Lychee Martini: Vodka, Lychee juice muddled with Vanilla pods, garnished with a vanilla pod and finished with effervescent rose spray.
Ginger Colada: Restaurant’s version of the classic Pinacolada flavored with ginger, garnished with juliennes of ginger.
CAC: A unique combination of Cinnamon, Apple and Cranberry layered with Bourbon whiskey and garnished with a whole cinnamon stick.
Whiskey Cream Old Fashion: A whiskey based cocktail made with fresh cream, flavored with nutmeg and garnished with rose spheres.
The Whiskey Cream Old Fashion is not on the menu currently but they may look at incorporating in the future. Drinks are priced at Rs. 695.
The Daily, Bandra
Gypsy Queen: Whisky, Cinnamon, Cloves, Peach and Apple smoke.
Oriental Passion: Vodka, Basil, Passion Fruit, Kaffir smoke.
Treausure Trove: Whisky, Peach Schnapps, Martini, Apple infused Tea, Bourbon smoke.
Backseat Driver: White rum, White wine, Lemongrass, Pomegranate and Orange zest smoke.
Fortune Hunter: Vodka, Peach, Rosemary, Cranberry, Cinnamon, Lemongrass smoke.
Smoked Loon: Gin, Cucumber, Jalapeno, Sour mix, Pepper, Basil – Ginger smoke.
The Mirage: Bourbon, Cardamom, Cloves, Kiwi, Lime, Maple smoke.
Drinks are priced at Rs. 550.
